So far we have learnt about all the nutrients in juicy red fruits and vegetables and tasty blue and purple fruits and vegetables. Did you try and add some of those colours to your meals during the week?
This week, we are going to learn about the yellow/orange group of fruits and vegetables!
Orange is the colour of fire and is symbolic for warmth, enthusiasm and encouragement. While, yellow is symbolic for happiness, clarity and energy. Sounds like a very fun and positive colour group to me!
Let’s dive in and see why this colour of fruits and veggies are so good for us.
What gives this group their vibrant colour? The phytochemical called carotenoids, which also acts as an antioxidant in our bodies. Did your parents ever tell you that eating lots of carrots can help your eyesight and help you see in the dark? Well this is actually true! Well-known carotenoids called Beta-carotene and lutein are converted to Vitamin A, which have been found to support healthy eyes as well as prevent cataracts and age-related macular degeneration, which can lead to blindness. Vitamin A is a precursor to retinol which helps our bodies synthesis the pigment in our eyes that operates in low-light conditions – hence why we have been told to eat lots of carrots to help us see in the dark.
Orange/yellow fruits and veggies are also packed with Vitamin C which is great for boosting our immune system and fighting harmful free radicals in our body.
There are so many delicious orange and yellow fruits and veggies that you can add to your diet. Let’s name a few of them!
